How to Use a Vertical Propane Smoker?

Step 1: Let’s assume you already have top-notch propane smoker ready to cook your favorite meat. And did you prepare your meat yet?
With spices or a dry hub season the meat, then wrap it up in a cling film and then leave it in the refrigerator for 30 minutes to marinate.
Step 2: While the meat is in the refrigerator, take some favored wood that you like and let them soak in water for 30 minutes. This will create an amazing smoky flavor.
Step 3: When both the meat and woods are being ready, in the meantime give a check on the propane cylinder. Make sure the knob and the connection to the smoker are completely secure, otherwise if anyhow gas leaks it can cause a heavy fire.
Step 4: You will see an aluminum pan in the smoker which is supposed to sit on the water when cooking. Now pick a big piece of foil paper and wrap the pan and then add some herbs of your choice and water in the pan.
Put the pan back to its place. It will create the moisture and flavor to the food.
Step 5: Remember? Have you left some woods to soak on water 30 minutes ago? There is a wood chip compartment in the smoker, put all the soaked wood chips in it. Do not overfill the compartment, when it is loaded with wood chips put it back.
Step 7: Time to do a little work on the vents and the chimney of the smoker. In order to maintain a good air circulation inside the smoker, you have the open the chimney and the vest halfway.
Most importantly, it is for letting the bad smokes out of the smoker otherwise it will effect on the meat you are cooking.
Step 8: Here comes the main part, heating up the smoker. Your smoker should be ready to get heated. All propane smokers come with an ignition with which you will be able to increase, decrease, turn on and off the fire smoothly.
However, in order to start the fire, you have to release the gas knob so that propane gas can travel to the smoker.

Step 9: Now remove the meat from the refrigerator, they should have been marinated nicely by now. Do not put the meat in smoker right after getting it out from the refrigerator. Wait, let the meat sit for at least 30 minutes.
And then put it on the grill grates which is above the aluminum pan that you wrapped with aluminum. Set the temperature of 225 F to 250 F, your food should get amazing doneness.
Step 10: When the burner in light up and the food it cooking, you will surely not keep the door open. And also do not open the door often to check on the cooking process. You should only check it after 1.30 or 2 hours later.
The reason behind is, when prematurely you open the door, all the heat goes away which badly affects the cooking process. Wait at least for 1.30 hour and then give it a check.
Step 11: After two hours, with the regulator reduce the heart and open the door to see the progress. And when you open the door, add some more water on the bowl that is right below the grill grate.
And also add some wood chip to the compartment. It will give the food more flavor. Then shut the door again!
Step 12: Once you think the cooking is done, then it is time to check. Reduce the heat again and this time you will need a meat thermometer.
With the thermometer check the doneness of the meat, if you think that is good, then take the food out and let it cool. And if you think it needs to be cooked a bit more, then again set it on the smoker and heat it up.
Step 13: When the cooking is done, make sure you turn off the smoker by using the knob. And also turn off the propane tank. Ensure these two things right before you take the food out of the smoker. And then put the meat on the table and enjoy with your family!
